How to make gourd rice
First of all, peel the bottle gourd and cut it into small pieces or grate it. If the seeds of bottle gourd are hard, remove them. Now heat 2 tablespoons oil or ghee in the pan. Add asafoetida and cumin seeds in it. When cumin starts crackling, add finely chopped onion and green chilli and fry till it becomes light golden. After this add ginger-garlic paste and fry for some time, so that its rawness goes away. Now add turmeric, coriander powder and red chilli powder or garam masala and fry the spices lightly.

Now add chopped or grated bottle gourd and salt as per taste. Mix bottle gourd with spices well. Cover the pan and cook on low flame for about 4-5 minutes. The bottle gourd will start becoming soft and will also release its water, so there is no need to add water separately to it. When the gourd is cooked well, add the remaining cooked rice to it. Mix the rice with the spices and bottle gourd gently, so that the rice does not break and the spices mix well with each grain.
