Green Chili Pickle Recipe: If you have ever eaten at a dhaba, you must have tasted the green chilli pickle there. Tart, spicy and aromatic – this pickle instantly makes any ordinary food special. But do you know that you can make the same Dhaba style chilli pickle at home, that too in just 5 minutes? Yes, this recipe is so easy that neither long preparation nor much hassle is required. Just some basic spices and a little green chilli, and a pickle will be ready which will add a blast of taste to the food. The cold season is also called the season of pickles. Ingredients
-Green chilli – 250 grams
-Mustard oil – half cup
-Lemon juice – 2 tablespoons
-Salt – as per taste
-Turmeric powder – 1 tsp
-Red chilli powder – 1 tsp
-Amchur powder – 1 tablespoon
-Asafoetida – 1 pinch
-Fenugreek seeds – 1 tsp
-Garlic cloves – 6-7 (optional)
विधि (How To Make Green Chili Pickle)
1. Preparation of chilli: First of all, wash the green chilli and wipe it thoroughly with a cotton cloth so that not even a single drop of water remains in it. Then remove the stem and lightly slit the chilli lengthwise in two-three places.
2. Prepare the masala: Add salt, turmeric, red chilli powder, dry mango powder, asafoetida and fenugreek seeds in a mixer and grind them coarsely. If you like garlic, you can add it too.
3. Add spices to the chillies: Now put chopped chillies in a bowl, add ground spices and lemon juice on top. Mix it well with hands so that the spices get coated properly in each chilli.
4. Prepare oil: Heat mustard oil in a pan until it smokes lightly. Turn off the gas and let the oil cool completely.
5. Add oil: Add cold oil to the chilli spice mixture and mix well.
6. Store the pickle: Fill the prepared pickle in a clean and dry glass jar. Keep the jar in the sun for 2-3 days so that the spices set properly.
7. Dhaba style chilli pickle is ready: Now your pickle is ready to eat. You can keep it in the fridge and take it out and eat it when needed.

-For real Dhaba flavour, make sure to use mustard oil.
-You can increase or decrease the quantity of spices according to your taste.
-If you want more durable pickle, then add a little more oil.
