Materials required for Muradabadi Biryani
- 500 grams of chicken or mutton (you can take cheese or mix wedge in a vegetarian option)
- 2 cup basmati rice
- 2 big onion thin chopped
- 1 large tomato finely chopped
- 2 green chili incision
- 1 tbsp ginger-garlic paste
- 1/2 cup yogurt
- 1 tbsp red chili powder
- 1 teaspoon turmeric powder
- 1 tbsp coriander powder
- 1/2 tbsp garam masala
- 1 teaspoon cumin
- 2-3 bay leaf
- 3-4 cloves, 2 green cardamom, 1 piece cinnamon
- Taste salt
- 3 tablespoons oil or ghee
- Green coriander and mint for leaf garnish
- Lemon juice
Step by step recipe
First wash the rice thoroughly and soak it in water for 20-25 minutes. This will swell rice well and long grains will come in biryani.
2. Fry spices in the cooker
Heat oil or ghee in a pressure cooker. Add cumin seeds, bay leaves, cloves, cardamom and cinnamon and add it well. Now add onion and fry till it turns golden brown.

3. Chicken/Mutton Pouring
Now add ginger-garlic paste and fry till the fragrance comes. Then add chicken or mutton and fry lightly. Add salt, turmeric, red chili and coriander powder and mix well.
Now add curd and tomatoes to it. Cook on low flame until the oil is separated from the spices.

Apply the lid of the cooker and let 1 whistle come on medium heat. Then turn off the gas and leave the cooker on the strength for 10 minutes.
7. Garnish and serve
Open the lid, mix rice gently so that the grains are not broken. Serve hot by adding green coriander, mint and lemon juice on top.

Special tips
- If you are using mutton, then boil it lightly and so that it cooks quickly.
- The real taste of Biryani comes when you keep it on low heat.
- If you add fry onion on top, the taste will increase further.
